Favorite Homemade Granola Bars Recipe

Chewy, wholesome, not too sweet homemade granola bars are a perfect lunch bag treat or after school snack. You can use whatever combination of nuts, seeds, and dried fruits you prefer, provided you keep the proportions the same, so feel free to adjust the recipe to suit your individual tastes.

Ingredients:

3/4 cup rolled oats (not instant)
1/4 cup chopped nuts (almonds, walnuts, or pecans)
2 tablespoons unsalted sunflower or pumpkin seeds (optional)
2 tablespoons flax seed
1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup canola or vegetable oil
1/2 cup firmly packed dark brown sugar
1 large egg
1 teaspoon vanilla
1/2 cup dried fruit of your choice (raisins, chopped dates, chopped
apricots, cranberries, etc)

Instructions

Preheat your oven to 350F degrees.

Line an 8-inch baking pan with foil that overhangs the pan on all sides by at least one inch. Lightly grease the foil and set the pan aside.

Spread the oats, nuts, and seeds on a baking sheet and bake them for about 10 minutes, or until they are lightly toasted, stirring once or twice to insure even cooking. Remove the pan from the oven and let the oat/nut mixture cool completely.

Meanwhile, in a small bowl, combine the wheat germ, flour, baking powder, salt and cinnamon with a whisk until blended and set aside.

In a large mixing bowl, stir the oil and brown sugar with a whisk until smooth. Stir in the egg and vanilla. Stir in the flour mixture just until combined, then stir in the oat mixture and dried fruit until well combined.

Spread the mixture into the prepared baking pan evenly, pressing gently.

Bake the bars until they are set, about 25 to 30 minutes. Remove the pan from the oven and place on a wire rack until the granola bars have cooled completely. Lift the slab of granola bars from the pan using the overhanging foil as handles and place on a cutting board. Cut into desired size bars.

These Homemade Granola Bars will keep at room temperature in an airtight container for up to 5 days.

Yield: One 8-inch pan of granola bars

Binders can be very useful because they can easily be updated by adding or removing recipes at any time.

 

It also helps to write comments on or next to the recipes that you have tried (who liked them and how good it was on a scale of 1 – 10). Toss out the ones that no one liked; why keep them? Try to set aside one night each week to try a new recipe and see how fast you go through all those recipes you’ve always wanted to try. After you have tried each new recipe, immediately choose another recipe to try, that way you will have time to shop for the ingredients before you try out the next one the following week.

Italian-American Favorite Recipe: Vegetable Parmesan with Eggplant, Zucchini, and Mushrooms

This is Italian-American favorite recipe. Here’s a no-fry vegetable casserole version of an Italian-American favorite. It can be done with litlle effort. Makes 8 servingsIngredients and directions: VEGETABLE PARMESAN WITH EGGPLANT, ZUCCHINI, AND MUSHROOMS INGREDIENTS :• 2 small eggplants• 2 medium zucchini• 2 medium yellow summer squash• 1 tablespoon salt• 3 large portobello mushroom caps• 1?2 cup olive oil• 2 medium onions, minced• 3 garlic cloves, minced• 1 tablespoon chopped oregano leaves or• 11?2 teaspoons dried oregano• 1 teaspoon stemmed thyme or 1?2 teaspoon dried thyme• 1?2 teaspoon freshly ground black pepper• 31?2 cups canned diced tomatoes• 1?4 cup chopped basil leaves• 6 ounces Parmigiano-Reggiano• 1?2 teaspoon grated nutmeg DIRECTIONS :1. Peel the eggplants and slice them the long way into 1?2-inch-thick strips. Slice the zucchini and squash the long way into 1?2-inch strips (you may have to cut off the crooked necks and slice these separately).2. Lay a double layer of paper towels on your work surface, place all the strips on the towels, and sprinkle 11?2 teaspoons salt over them. Turn over and sprinkle on the remaining 11?2 teaspoons salt.3. Let stand for 30 minutes, turning once after 15 minutes. Meanwhile, divide the racks into the top and bottom thirds of the oven and preheat the oven to 400°F.4. Blot all the vegetable strips dry with clean paper towels, then set the strips on two large lipped baking sheets; do not overlap any strips. Thinly slice the mushroom caps and place these on the trays as well. Drizzle 3 tablespoons oil over all the vegetables, then turn them over and drizzle 3 tablespoons on their other sides. (You can spread the oil around with a pastry brush for better coverage.)5. Place in the top and bottom thirds of the oven and bake for 15 minutes. Reverse the sheets top to bottom and back to front, flip the vegetables over, and continue baking until soft, lightly browned, and a little shriveled, about 15 more minutes. Remove the sheets from the oven and place on wire cooling racks. Shift the racks in the oven so one is in the middle and reduce the oven temperature to 350°F.6. Heat a large skillet or sauté pan over medium heat. Swirl in the remaining 2 tablespoons oil and add the onions. Cook, stirring often, until translucent, about 3 minutes. Add the garlic, oregano, thyme, and pepper; cook for 30 seconds.7. Pour in the tomatoes, stir well, and bring to a simmer. Cover, reduce the heat to low, and simmer slowly for 30 minutes, stirring occasionally. Uncover the pan, raise the heat to medium, and continue cooking until thickened slightly, about 5 minutes. Stir in the basil. 8. Use a cheese plane or a vegetable peeler to shave the Parmigiano-Reggiano into thin strips. 9. Layer these in the following order evenly in a 13 1?9-inch baking dish: a quarter of the tomato sauce, the eggplant slices, a quarter of the cheese strips, a third of the remaining tomato sauce, the zucchini slices, a third of the remaining cheese strips, half the remaining tomato sauce, the mushroom slices, half the remaining cheese, the yellow squash strips, all the remaining tomato sauce, and all the remaining cheese strips. Some of the vegetables may not entirely cover the pan in a single layer; you can make up for any defi cits in the next layer of vegetables above. Sprinkle the top with nutmeg.10. Bake until the cheese has melted and browned a bit on top and the sauce is bubbling, about 40 minutes. (You may want to lay a large piece of aluminum foil on the rack below the casserole after it has baked for 30 minutes to catch any drips.) How to Make a Recipe your own

We all have favorite recipes that we make over and over again. As we get experienced with cooking a particular dish we start to think of it as our own, but often times it’s really out of a magazine or cookbook. You can however alter a recipe and by doing so make it your own creation.

Don’t be afraid to experiment with tastes. Have a flair for Italian food? Try adding garlic, basil, oregano and other Italian seasonings to your favorite dishes. You can also try marinating your meats in your favorite wines before cooking them it can also give them that extra something they’ve been missing.

Personally I really love cloves in my baking. Try adding cloves or nutmeg to your sweet breads like banana or zucchini to give them a little extra flavor. Another helpful tip is to add soda in place of water in your cakes. This makes them much more moist and flavorful. Experiment with different amounts as some recipes can become too moist and fall apart!

Learn what each ingredient in your recipe does to modify the taste and texture of the dish. Understanding this allows you to alter recipes to do exactly what you want them to. Is your poultry not flavorful enough? Instead of adding more seasonings try adding more salt, it’ll bring out the natural flavor of the meat. If your favorite baked good isn’t fluffy enough for you try adding more leaveners like baking soda, baking powder and yeast.

Have fun with it and don’t worry if it doesn’t come out the way you want it to the first time around. The important thing is once you’ve gotten it right you’ll have a new recipe all your own!

In this video, Betty demonstrates how to make Eggplant Parmesan. I have had requests for this dish, and I am sorry it has taken me so long to get around to making it. It is truly delicious and very easy to make. Ingredients: 1 large eggplant Salt 2 eggs, well beaten 1 ½ cups Ritz cracker crumbs (Any cracker crumbs may be substituted.) Hot peanut oil (about 1 ½ tablespoons per skillet of breaded eggplant slices) 24-oz. jar Italian sauce or spaghetti sauce or equivalent amount of homemade Marinara sauce (I used Prego brand-Three Cheese variety in 23.5-oz. jar.) 2 cups shredded mozzarella cheese ¼ to ½ cup shredded Parmesan cheese Peel a large eggplant and cut into ¼ to 3/8-inch slices. Sprinkle each slice with salt, and place in a bowl. Let stand 30 minutes; rinse and pat dry. Dip in eggs and coat with Ritz cracker crumbs. Fry in hot peanut oil until golden brown on both sides. Drain on paper towels. (You may need to fry the slices in shifts, adding additional peanut oil.) Place half of the browned eggplant slices into a 12-inch by 8-inch by 2-inch (or similarly sized) baking dish. Spread with half of the Italian sauce. Top with half of the shredded mozzarella and Parmesan cheeses. Repeat layers. Bake at 350 for 20 to 25 minutes, or until mixture is thoroughly heated. It will be bubbly, the cheese will have melted and the eggplant will have softened. Serve immediately with hot baked bread! This is a great vegetarian dish; just use Italian sauce made with vegetables only. It

Hi, this is Sheila talking to you about my favorite cookbook, Restaurant Favorite Recipes. A while ago my family didn’t like my cooking because, “Mom you make the same stuff over and over!”, so I tried making new things off the internet or trying new cookbooks but they didn’t like the stuff I found and neither did I. They told me they only like a few dishes of mine, and they liked eating out. I started looking for copycat recipes, and none of them tasted like the original stuff from the restaurant. After a long time of looking, I was about to give up and I found Restaurant Favorite Recipes.This cookbook is awesome, I use it at least once a week if not more! My kids love this cookbook too! All their friends sleep over and I ask them what they want from the restaurants in the cookbook and they love it! Now my family loves my cooking.

While using this cookbook, my family used many recipes but out of them my family loves three, and one coffee drink. The first recipe my family loves is the T.G.I. Friday’s Baked Potato Skins. These were the family favorite of all the appetizer recipes in this cookbook. The potato skins are one of the most popular recipes of T.G.I. Friday’s and getting to make them at home is a big plus. There are many copycats of this recipe, but none that are the same as T.G.I. Friday’s.

The second recipe my family loves is the Olive Garden Parmesan Crusted Chicken. It is delicious. This dish is my personal favorite, and my family loves it too. We don’t even have an Olive Garden in the town that we live in. It makes me very glad I was able to make this recipe, because my family would always beg to go to Olive Garden when we went to towns that had one.

The third recipe my family loves is the Applebee’s Bourbon Street Steak. My kids are steak monsters, if you put steak in front of them the will scarf it and possibly the plate along with it! Needless to say this was the favorite of all the recipes. The kids told me that they have tried a lot of my steak dishes, but none as good as this one.

Also in this cookbook there was Starbucks Coffee. No one in my family had ever been a big Starbucks lover because of the big price. My son had really liked it but we couldn’t afford to pay so much for coffee. When we got this recipe I tried a couple recipes, but I really liked one. The White Chocolate Mocha! I drink this coffee every morning. My son loves the Frappuccino, it is not my favorite but it is still good. I am very glad there was Starbucks in this cookbook because we get expensive quality for a cheap price.

There are many great things about this cookbook and one of them is having three other cookbooks. There is a cookie cookbook, a beverage cookbook, and a low-carb cookbook. Out of these three my favorite was the cookie cookbook. I was not good at baking! I never have been good at baking, but I gave it a shot and after some time I am now good. There are many original recipes in this book that are very good! The beverage cookbook was also good, it had some yummy, interesting drinks. There was also a low-carb cookbook that I usually use for my lunch. I have lost a lot of weight and I like to keep it low, so I use it for lunch when my kids are at school.

This cookbook was a great addition to my kitchen and my family loves it. It really is nice to be able to have a nice quality restaurant meal for so much less than you would pay at a restaurant. If you are wanting a nice addition to your list of recipes I really encourage you to buy this cookbook. It is cheap and pays itself off very quickly. If you buy this cookbook, you will be very happy you did!
